Red Iguana

Broaden your horizons beyond beyond the usual Tex-Mex. Waiters weave between the tables while the buzz of happy diners and rock music add to the clatter from the kitchen. Folks come here to feast rather than seal a business deal. A favorite of grad students. Seven moles are among the entrees that extend the menu well beyond the usual Tex-Mex, back to the Aztec roots of Mexican cuisine.

Killer nachos live up to their name, and the chile verde and chile colorado are superior, but try the moles and other Oaxacan specialties. The roots of the Red Iguana's success lie with Maria and Ramon Cardenas, who came to Salt Lake City in 1965. The next generation continues to evolve the tradition of promoting regional Mexican fare.
